So... as I was searching this week for recipes I would eat that are less expensive to make I stumbled across this jewel of a cookbook!
Ingredients:
1 c soft fresh bread crumbs (I cheated and used plain panko)
1/3 c Parmesan cheese
2 T minced parsley
1/2 clove garlic, minced
1 t salt (I would use 1/4 t to 1/2 t)
1/4 t black pepper
1/2 c (1 stick) butter or margarine, melted
1 chicken (2 1/2 - 3 pounds) cut into serving pieces.
Directions:
Preheat oven to 400 degrees. Butter (or spray with cooking spray) a 13x9 in baking dish.
In a shallow bowl, combine the bread crumbs, cheese, parsley, garlic, salt and pepper.
Dip the chicken into the butter. Roll or drop chicken into bread crumb mix, make sure to cover both sides. Then but coated chickens in the baking dish. (I flipped mine about half way through... just for kicks and giggles.)
Pour remaining butter over the chicken and bake uncovered for 35-40 minutes, basting occasionally with pan juices.

Truth: LOVED IT!!! Plus it made my apartment smell soo fantastic I had to restrain myself from eating all of them! :)
