So I've been in search for a new cookie recipe for a while. A recipe that uses ingredients that I have and doesn't require anything funky. And I found this one from Love Veggies and Yoga. The first time I made them they were a little too sweet. So I've adjusted the ingredients to my liking, and now they taste so good!
1/2 cup butter, softened to room temp
1 c brown sugar
- beat these until light and fluffy
1/3 cup peanut butter
- add & mix in
1 egg + 1 yolk
2 teaspoons vanilla
2 teaspoons - 1 tablespoon of milk (it helps the batter not to be too dry)
- stir in
1 1/4 cup all-purpose flour
1 cup old fashioned whole oats
1/2 teaspoon baking soda
1/2 teaspoon salt
- stir in slowly. Yum!
1 cup chocolate chips
optional: 1/2 cup peanut butter chips, pecans
- add chocolate chips. If you are feeling crazy, chopped pecans are good too!!!
Yum!!! Keep the recipe!!! It's so good!
