Well, this week I didn't feel like finding a new recipe, so I'm making one of my classic meals - Tamale Pie. It's so good. And you use the slow cooker, so it's super easy.
Chop up an onion and sauté it up with some garlic.
Then add a pound of ground beef and cook it up.
Drain off the fat.
Add taco seasoning.
Then chop up a tomato and a jalapeño.
And add them to the meat mixture.
Then put it in the crockpot. Add a can of drained corn and a can of rinsed and drained black beans.
Put the lid on and cook it for a few hours. About an hour before make up some cornbread. You can use a corn bread muffin mix, or make your own mix up. I used a recipe from my BHG recipe book - don't double it. Make a single batch, otherwise you end up with a super thick cornbread on top!
It's so yummy!
